Grilled Pineapple Chicken Skewers

The soy-honey marinade does double duty as a glaze, brushed on again in the last few minutes so the skewers come off the grill with a sticky, caramelized edge instead of a dry one.

Method

  1. Marinate

    Whisk the soy sauce, honey, vinegar, garlic, and ginger together. Toss the chicken in half the marinade and let sit for at least 30 minutes; reserve the rest for basting.

  2. Thread the skewers

    Thread the chicken, pineapple, bell pepper, and onion onto skewers, alternating as you go.

  3. Grill

    Grill over medium-high heat for 10–12 minutes, turning every few minutes, until the chicken is cooked through and charred in spots.

  4. Glaze and finish

    Brush with the reserved marinade during the last 2 minutes of grilling.

  5. Rest and serve

    Let the skewers rest for 3 minutes before serving.

Kitchen notes

If using wooden skewers, soak them in water for 20 minutes first so they don't scorch on the grill. Great served over coconut rice.
